Hen Sauce Piquant

- I like using a Black pot for this one..... shopping list
- and cooking out side on a burner makes this dish have a better flavor. Although you may cook this on your stove top inside. shopping list
- 1 Hen (3-6 lbs) shopping list
- 1-2 lbs of smoked sausage shopping list
- 1-2 lbs of Smoked Tasso shopping list
- 1 -2 lbs of Andouille shopping list
- 1 can of diced tomatoes shopping list
- 1 small can tomatoe sauce shopping list
- 2 large cans of chicken broth shopping list
- 1/2 cup cooking oil shopping list
- 1tbsp Savoy Roux shopping list
- 1 large yellow/white onion chopped shopping list
- 1/4 cup of garlic shopping list
- 2 tbsp of japaleno peppers chopped shopping list
- 1/2 cup green onions shopping list
- 1/4 cup of Parlsey chopped shopping list
- you may add some green bell pepper this is optional .. shopping list
- if you choose to the bell pepper use a med. and use 1/2 chopped up add this at the time you are browning your onions....) shopping list
- seasoning of course....( salt, pepper, red pepper, or my favorite Slap yo mama) shopping list
How to make it
- Now take your black pot and add your cooking oil
- Placing you fire (heat) MED to High...some place in between..lol
- take your hen and add your seasoning black/red pepper salt and other...
- place the hen into the oil and let each piece brown after this is brown add sausage, tasso andouille and let this brown .
- take this out of the pot once all of your meat choices are brown.
- now add: onions,1/2 green onions , japaleno, garlic, and bell peper if you chose to use it......Saute' until the yellow /white onion is clear
- add roux and saute' this around with the onion and other mixture of seasonings.
- now add diced tomato but pour the liquid in this out into a dish for later use...Saute' the tomato then after about 2 to 5 minutes
- add 1/2 can of Tomato sauce.
- (The way I cook this the gravey is not real red.... it's sort of a brown to the red... : )
- now add your hen back into your black pot ...stiring it around.......
- after a bit..( 2-6 minutes of stirring) Add slowly chicken broth.....start with about a pint. turning down your heat.....to med to low....all together I will use about quart (if you run out of broth use water) or better because we love gravey!!
- add parsley and rest of green onions...
- Let this cook until Hen is tender.........
- TIP:
- If your gravey is too thin.and too red.....add about tsp to tbsp of Savoy roux but be careful you do not want this to be too thick....either...
- Serve on Rice, or mash potato...corn bread....
