How to make it

  • Heat oil in a large skillet on medium high
  • Add garlic and cook about a minute, do not brown
  • Stir in eggplant, tomatoes, tomato paste and seasonings
  • Cover and simmer for 15 minutes, stirring occasionally
  • Add zucchini; cover and simmer an additional 10 minutes, stirring occasionally
  • Serve sauce over pasta
  • Sprinkle with Parmesan
  • Garnish with parsley
