Mesquite Brisket Recipe

Ingredients
  • 1/4 c. Greek-style seasoning
  • 15 peeled cloves of garlic
  • 8 lbs. of beef brisket

Directions
  1. 1. With a paring knife, make deep slits into the beef brisket and place garlic cloves into the slits. Sprinkle the beef brisket with seasoning to your desire.
  2. 2. Heat charcoals until hot, and place mesquite wood over them.
  3. 3. Place the fat side of the beef brisket down on the grill. Then, smoke the brisket for approximately 2 hours. Do not turn meat.
  4. 4. Remove the brisket from the grill tightly double wrap it with extra heavy aluminum foil. Place it in the oven on a cookie sheet and heat for approximately 2 hours at 250 degrees Fahrenheit.
  5. 5. Finally, remove beef brisket from the oven and let sit in the foil for approximately 30 minutes to 1 hour to let it "firm up" and absorb the juice.
