How to make it

  • Rinse lemon grass and chop into two inch lengths. Crush lengths with the flat side of a large knife (you’re allowing more flavor to come out during steeping).
  • In a medium sized pot, bring 5 cups of water, ½ cup sugar, 7 thin slices (or more if you wish) of ginger, and lemon grass to boil.
  • Take off the heat and add 5 bags of green tea. Let the bags steep in the liquid for about 4 minutes or until flavor is as strong as you’d like. Discard tea bags; let tea cool, about 30 minutes.
  • Pour through a fine strainer into a pitcher. Cover and chill until cold, at least 2 hours. Tea keeps up to two days in the refrigerator. Pour into tall glasses filled with ice.
