I found this in a magazine. We love salmon patties, but will have to try it with the cheese melted on top.

Ingredients
  • 1 (15 1/2-ounce) can salmon, drained and flaked
  • 1 cup prepared mashed potatoes
  • 1/4 cup diced green pepper
  • 1/4 cup diced onion
  • 1 egg
  • 3 tablespoons butter
  • 6 slices Monterey Jack cheese

Directions
  1. Combine salmon, mashed potatoes, green pepper, onion and egg; form into 6 patties. Pan-fry patties in butter and top with cheese. Sauté until cheese melts.
