Dars Chili Recipe
My husband and I love chili. I've added lots of veggies so that I could have a great big bowl when I was starving and still not eat too many points. But it isn't a diet recipe. It's just healthy. Each two cup serving has 5.6 points.

Ingredients
  • 2 pounds of ground sirloin (or use ground chicken for a change but adjust points)
  • 4 small cans of kidney beans (red), drained and rinsed
  • 1 large can of black beans, drained and rinsed
  • 1 large can of chick peas (garbanzo beans), drained and rinsed
  • 2 cups corn, frozen
  • 2 large cans of chopped tomatoes
  • 1 small can of tomato paste
  • 2 Tbsp fat free cocoa
  • 2-4 Tbsp ground cumin
  • 1-6 Tbsp ground Mexican chili powder
  • Coriander to taste, chopped finely
  • salt and pepper to taste
  • oregano 1-2 tsp
  • basil 1-2 Tbsp
  • parsley 1 Tbsp
  • 4 cups chopped onions
  • 4 cloves of garlic, minced
  • 2 cups chopped green pepper (in chunks)
  • 2 cups chopped red pepper (in chunks)
  • Mushrooms, either left whole or halved
  • 1 large bag of fresh spinach leaves

Directions
  1. Brown ground sirloin in frying pan.
  2. Add onions and mushrooms and cook until onions have softened.
  3. Add garlic and stir quickly.
  4. Add spices and mix.
  5. Add the tomatoes.
  6. Add the beans and stir gently.
  7. Bring the mixture to a soft boil then simmer for a couple of hours without the lid.
  8. 30 minutes before serving add the peppers, washed spinach leaves and corn.
  9. If you are freezing any of it, portion out 2 cup servings now.
  10. Otherwise stay on simmer until the peppers are heated.
  11. Sometimes I use a little cornstarch to thicken but usually it's not necessary.
  12. Add extra chopped coriander to each bowl as you serve it.
  13. Each 2 cup bowl has 5.6 points.

Dar hon - this sounds wonderful. I love the cocoa here - it gives such a depth of flavor with the chili spices. And chick peas, too - wow. I can't wait to try your recipe. Great post - thanks so much! I'll ket you know what I think... =)
