How to make it

  • Brown ground sirloin in frying pan.
  • Add onions and mushrooms and cook until onions have softened.
  • Add garlic and stir quickly.
  • Add spices and mix.
  • Add the tomatoes.
  • Add the beans and stir gently.
  • Bring the mixture to a soft boil then simmer for a couple of hours without the lid.
  • 30 minutes before serving add the peppers, washed spinach leaves and corn.
  • If you are freezing any of it, portion out 2 cup servings now.
  • Otherwise stay on simmer until the peppers are heated.
  • Sometimes I use a little cornstarch to thicken but usually it's not necessary.
  • Add extra chopped coriander to each bowl as you serve it.
  • Each 2 cup bowl has 5.6 points.

    Dar hon - this sounds wonderful. I love the cocoa here - it gives such a depth of flavor with the chili spices. And chick peas, too - wow. I can't wait to try your recipe. Great post - thanks so much! I'll ket you know what I think... =)
