Dars Chili

- 2 pounds of ground sirloin (or use ground chicken for a change but adjust points) shopping list
- 4 small cans of kidney beans (red), drained and rinsed shopping list
- 1 large can of black beans, drained and rinsed shopping list
- 1 large can of chick peas (garbanzo beans), drained and rinsed shopping list
- 2 cups corn, frozen shopping list
- 2 large cans of chopped tomatoes shopping list
- 1 small can of tomato paste shopping list
- 2 Tbsp fat free cocoa shopping list
- 2-4 Tbsp ground cumin shopping list
- 1-6 Tbsp ground Mexican chili powder shopping list
- coriander to taste, chopped finely shopping list
- salt and pepper to taste shopping list
- oregano 1-2 tsp shopping list
- basil 1-2 Tbsp shopping list
- parsley 1 Tbsp shopping list
- 4 cups chopped onions shopping list
- 4 cloves of garlic, minced shopping list
- 2 cups chopped green pepper (in chunks) shopping list
- 2 cups chopped red pepper (in chunks) shopping list
- mushrooms, either left whole or halved shopping list
- 1 large bag of fresh spinach leaves shopping list
How to make it
- Brown ground sirloin in frying pan.
- Add onions and mushrooms and cook until onions have softened.
- Add garlic and stir quickly.
- Add spices and mix.
- Add the tomatoes.
- Add the beans and stir gently.
- Bring the mixture to a soft boil then simmer for a couple of hours without the lid.
- 30 minutes before serving add the peppers, washed spinach leaves and corn.
- If you are freezing any of it, portion out 2 cup servings now.
- Otherwise stay on simmer until the peppers are heated.
- Sometimes I use a little cornstarch to thicken but usually it's not necessary.
- Add extra chopped coriander to each bowl as you serve it.
- Each 2 cup bowl has 5.6 points.
