How to make it

  • PREHEAT
  • oven to 350 degrees.
  • CRUST
  • Mix and press into a 9 inch square pan: 1/2 c butter, 5 Tbsp powdered sugar, and 1 c flour. Bake crust for 15 minutes at 350 degrees.
  • FILLING
  • While crust is baking, beat eggs and add sugar, flour, baking powder, salt, and vanilla. Fold in rhubarb. Pour filling over baked crust and bake for another 35 minutes at 350 degrees.
  • **Serve with whipped cream or vanilla ice cream.

    HA HA HA!! Love your note! Great post - it grows by leaps and bounds here in Vermont, too. Us "natives" quite often refer to it as "pie plant". : )
