Ingredients

CRUST

1/2 c butter

5 Tbsp powdered sugar

1 c flour

FILLING

2 eggs, beaten

1 1/2 c sugar

2 Tbsp flour

3/4 tsp baking powder

pinch salt

2 c chopped rhubarb

Directions

PREHEAT

oven to 350 degrees.

CRUST

Mix and press into a 9 inch square pan: 1/2 c butter, 5 Tbsp powdered sugar, and 1 c flour. Bake crust for 15 minutes at 350 degrees.

FILLING

While crust is baking, beat eggs and add sugar, flour, baking powder, salt, and vanilla. Fold in rhubarb. Pour filling over baked crust and bake for another 35 minutes at 350 degrees.

**Serve with whipped cream or vanilla ice cream.
