These rhubarb squares make the most of this sour vegetable that, if you live in Minnesota, is probably growing, without any assistance, behind your garage.

Ingredients
  • CRUST
  • 1/2 c butter
  • 5 Tbsp powdered sugar
  • 1 c flour
  • FILLING
  • 2 eggs, beaten
  • 1 1/2 c sugar
  • 2 Tbsp flour
  • 3/4 tsp baking powder
  • pinch salt
  • 2 c chopped rhubarb

Directions
  1. PREHEAT
  2. oven to 350 degrees.
  3. CRUST
  4. Mix and press into a 9 inch square pan: 1/2 c butter, 5 Tbsp powdered sugar, and 1 c flour. Bake crust for 15 minutes at 350 degrees.
  5. FILLING
  6. While crust is baking, beat eggs and add sugar, flour, baking powder, salt, and vanilla. Fold in rhubarb. Pour filling over baked crust and bake for another 35 minutes at 350 degrees.
  7. **Serve with whipped cream or vanilla ice cream.
