Ingredients
  • 200g Digestive biscuits
  • 150g Butter
  • 3dl Cream
  • 200g plain Cream cheese
  • 1 package Raspberry jelly (125 grams jelly powder)
  • 2 1/2dl Water

Directions
  1. In a plastic bag, crush the digestive biscuits with a rolling pin
  2. After the biscuits are well crushed, gradually rub in the butter.
  3. Press the crushed biscuit and butter "dough" into an even layer in a deep pie dish, greased with butter. Set aside.
  4. Dissolve the raspberry jelly in the boiling water and allow to cool.
  5. In a bowl, combine the cream cheese and cream, mix until smooth.
  6. Add the jelly to the cheese and cream mixture and mix well.
  7. Pour the cheese, cream and jelly mix over the biscuit base.
  8. Place in the fridge and leave until set.
  9. The jelly (Jell-O) used in the above recipe is Freia's Bringebaer Gele, which comes in a 125 gram package and is meant to be mixed with 5 dl water. Digestive biscuits are British semi-sweet biscuits, also known as sweetmeal biscuits. A possible substitution is graham crackers.
  10. Sometimes before the cheesecake is set, I swirl in some puréed raspberries. It looks great, and adds flavour.

Just great and so simple.

I made this last night with orange jelly and added mandarin segments.
It was sooooo delicious!! Thank you so much.

Can you please tell me what "dl" is as far as a measurement is? We dont use this measurement in New Zealand and Im keen to make this very easy recipe.
