Ingredients

How to make it

  • In a plastic bag, crush the digestive biscuits with a rolling pin
  • After the biscuits are well crushed, gradually rub in the butter.
  • Press the crushed biscuit and butter "dough" into an even layer in a deep pie dish, greased with butter. Set aside.
  • Dissolve the raspberry jelly in the boiling water and allow to cool.
  • In a bowl, combine the cream cheese and cream, mix until smooth.
  • Add the jelly to the cheese and cream mixture and mix well.
  • Pour the cheese, cream and jelly mix over the biscuit base.
  • Place in the fridge and leave until set.
  • The jelly (Jell-O) used in the above recipe is Freia's Bringebaer Gele, which comes in a 125 gram package and is meant to be mixed with 5 dl water. Digestive biscuits are British semi-sweet biscuits, also known as sweetmeal biscuits. A possible substitution is graham crackers.
  • Sometimes before the cheesecake is set, I swirl in some puréed raspberries. It looks great, and adds flavour.
