How to make it

  • Mix all muffin ingredients in large bowl until well blended.
  • Place paper liners in muffin tray.
  • Fill muffin cups 1/3 of the way full with muffin mixture.
  • Place a dollop of cream cheese on top of muffin mixture.
  • Spoon 1 tablespoon worth of fruit preserves onto cream cheese cube.
  • Cover fruit with more muffin batter, enough to completely cover cream cheese and fruit.
  • Bake at 350 F for 22-25 min.
  • **Makes 1 dozen regular sized muffins.
