Dairy-free Wine Cake Recipe

Ingredients

BLEND:

2 1/2 cups flour

1 Tbsp baking powder

1 tsp baking soda

1 tsp nutmeg

1 tsp salt

IN SEPARATE BOWL COMBINE:

1 1/2 cups sugar

1/2 cup oil

1/2 cup water

2 tsp vanilla

2 large eggs

1/2 cup sherry wine

GLAZE:

2 cups C&H powdered sugar (not generic-it has a different flavor)

1-2 Tbsp water to desired thickness

Directions

Preheat oven to 350 degrees

beat wet ingredients and sugar on low speed for 30 sec

add dry ingredients and beat on medium speed for 2 minutes

pour into greased 9 inch round or 8x8 inch square pan

bake for 25 to 30 min or until toothpick inserted into center comes out clean

once cooled, remove from pan and pour glaze over cake
