Lemon Meringue Pie

- 1 (9-inch) baked passtry shell shopping list
- 1 2/3 cups sugar shopping list
- 6 tbsp cornstarch shopping list
- 1.2 cup lemon juice shopping list
- 4 eggs, seperated shopping list
- 1 1/2 cup boiling water shopping list
- 2 tbsp margarine or butter shopping list
- 1/4 tsp cream of tartar shopping list
How to make it
- Preheat oven to 350^ degrees.
- In saucepan, combine 1 1/3 cups sugar and cornstarch; add lemon juice. In small bowl, beat egg yolks; add to lemon mixture. Gradually add water; stirring constantly. Over medium heat, cook and stir until mixture boils and thickens, about 8 to 10 minutes. Remove from heat. Add margarine; sit until melted. Pour into prepared pastry shell. In small mixer bowl, beat egg whites with cream of tartar until soft peaks form; gradually add remaining 1/3 cup sugar; beating until stiff but not dry. Spread on top of pie, sealing carefully to edge of shell. Bake 12 to 15 minutes or until golden brown. Cool. Chill before serving, Store leftovers in fridge.

Fantastic flavor!! Very easy to make! Thanks for this great recipe! Took me a while to pick 1 and this was it. I'm very happy with my choice! Oh but 1 thing instead of 1.2 cup should say 1/2 cup lemon juice.
