How to make it

  • Combine rice, cheese, tuna, olives, onions, parsley & season-all salt.
  • Stir in eggs and milk, mixing throughly.
  • Spray 6 (lg) or 12 (sm) muffin cups w/ pam.
  • Divide rice mixture evenly among cups.
  • Bake @ 375 for 15 mins or until lightly browned.
  • Loosen w/ spatula and arrange on serving plate.
  • Serve with Tangy Butter Sauce

  • 1/4 Cup melted butter, 1 tbsp lemon juice, 1/2 tsp season salt & 1/2 tsp parsley flakes.
  • Spoon over mufflettes.

    Hi! How funny! I've had made this same recipe (same name) for years and years and have had it on my SDAEOP recipe website for years. http://spoolman.com/sdaeop4/casseroles.html. I love it. I also make it with wild rice.
