Seafood Stuffed Flounder

- 2 lbs. skinless flounder 1/4 - 1/2 inch thick( can also use sole ) shopping list
- 1 lb. sea scallops ( can also use peeled cooked shrimp) shopping list
- 1 10 oz. pkg frozen chopped spinach, thawed shopping list
- 1 tbls. butter shopping list
- 1 onion, chopped shopping list
- 1 cup herb stuffing mix shopping list
- 1/2 cup sour cream shopping list
- 1/4 cup parmesan cheese shopping list
- 1 egg, lightly beaten shopping list
How to make it
- Rinse fish and pat dry
- Cook scallops in boiling water 1-3 minutes or until scallops turn opaque
- Drain and cut into quarters
- Cook onion in butter until tender
- Squeeze water out of spinach
- Slightly crush stuffing mix
- In a mixing bowl, mix together onion, spinach, stuffing mix, sour cream, parmesan cheese, and egg.
- Carefully stir in scallops
- Preheat oven to 375
- Measuring length of fish to 6-7 inches, (overlap thinner ends of short fillets to make one)
- Spread about 1/2 cup of scallop mixture on top of each piece of fish
- Roll fish up starting at thin end and secure with a toothpick
- Bake for 20-25 minutes in a greased baking dish
