Ingredients
  • 2 lbs. skinless flounder 1/4 - 1/2 inch thick( can also use sole )
  • 1 lb. sea scallops ( can also used peeled cooked shrimp)
  • 1 10 oz. pkg frozen chopped spinach, thawed
  • 1 tbls. butter
  • 1 onion, chopped
  • 1 cup herb stuffing mix
  • 1/2 cup sour cream
  • 1/4 cup parmesan cheese
  • 1 egg, lightly beaten

Directions
  1. Rinse fish and pat dry
  2. Cook scallops in boiling water 1-3 minutes or until scallops turn opaque
  3. Drain and cut into quarters
  4. Cook onion in butter until tender
  5. Squeeze water out of spinach
  6. Slightly crush stuffing mix
  7. In a mixing bowl, mix together onion, spinach, stuffing mix, sour cream, parmesan cheese, and egg.
  8. Carefully stir in scallops
  9. Preheat oven to 375
  10. Measuring length of fish to 6-7 inches, (overlap thinner ends of short fillets to make one)
  11. Spread about 1/2 cup of scallop mixture on top of each piece of fish
  12. Roll fish up starting at thin end and secure with a toothpick
  13. Bake for 20-25 minutes in a greased baking dish

This looks great....wonder if I can sub. crabmeat for scallops? or add crab to it!
