How to make it

  • Rinse fish and pat dry
  • Cook scallops in boiling water 1-3 minutes or until scallops turn opaque
  • Drain and cut into quarters
  • Cook onion in butter until tender
  • Squeeze water out of spinach
  • Slightly crush stuffing mix
  • In a mixing bowl, mix together onion, spinach, stuffing mix, sour cream, parmesan cheese, and egg.
  • Carefully stir in scallops
  • Preheat oven to 375
  • Measuring length of fish to 6-7 inches, (overlap thinner ends of short fillets to make one)
  • Spread about 1/2 cup of scallop mixture on top of each piece of fish
  • Roll fish up starting at thin end and secure with a toothpick
  • Bake for 20-25 minutes in a greased baking dish

    this looks great....wonder if I can sub. crabmeat for scallops? or add crab to it!
