Yummy shrimp skewers in tamarind butter sauce, it can't get any better than this! Serve as a snack or main dish with some hot and fresh french bread.

Ingredients
  • 1 lb. shrimps with heads on
  • bamboo skewers soaked in water for at least an hour to prevent from burning
  • 1/4 cup tamarind concentrate (you can buy this at any asian grocery store)
  • 2 tbsp. water
  • 3 tbsp. butter
  • 2 tbsp. soy sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. honey
  • 2-3 cloves minced garlic
  • black pepper

Directions
  1. Heat oven to 350 degrees
  2. clean the shrimps and peel only the body shells leaving the head and tail attached
  3. skewers the shrimps (3-4 shrimps per skewer) and put aside
  4. in a sauce pan, put tamarind concentrate, water, butter, soy sauce, brown sugar, honey, garlic and black pepper and let it cook down for about 5 min. or thickens slightly. turn off heat and put aside
  5. put the skewer shrimps on a rack and baste/brush the shrimps with the tamarind sauce on both side
  6. grill in oven for about 5 min. on each side.
  7. continue to baste the shrimps while flipping them on each side until shrimps are cooked
  8. do not over cook the shrimps!
