Ingredients

3 cups Self raising flour

2 cups mashed banana

1 cup sugar

1/2 cup oil

2/3 cup water

Directions

Sift all dry ingredients into large mixing bowl!

Add the wet ingredients and mix well.

pour mixture into muffins trays and bake in a moderate heat oven for 15-20min.

serve cool, preferably with cold iced lemonade!

OMG! Fab recipe for me as I'm diary and egg intolerant- I added a few extras to make it a bit naughty-They lasted about 1 hour in our house! Yum

1/4 c Pecans, 1/2 cup of raisins to dry mix.
Add 1 pecan to each muffin before baking.
Iced with lemon drizzle ( 1/2 lemon juiced and icing sugar until thickish consistency) drizzle over when warm and then sprinkle with sugar and cinnamon
