How to make it

  • In a large bowl add your lamb pieces and cover with a balsamic and water, or a balsamic and olive oil mix.
  • Leave to stand for about an hour.
  • In a bowl add the maple syrup, garlic, mint sauce and lemon rind, and mix well to your preferred consistency.
  • Take the marinated lamb pieces out of bowl and add them to your grill pan or oven dish.
  • Cover the mint and maple glaze all over the lamb and cook.
  • I oven cook mine for about 40 mins, but this could also be great on a bbq or grilled.

    Oh. My. Goodness. I have been looking for a recipe that would mimic the Mint Glazed Lamb chops I used to buy in Ireland and I have FINALLY found it here. I made it tonight and it was fantastic! I used a mint sauce recipe I googled and fed a very happy family - thank you! *contented sigh*

    mint sauce recipe:
    1/2 cup white vinegar
    1/4 cup sugar
    1/2 cup minced mint leaves (I used dried mint from my garden)

    Put the vinegar and sugar in a small pan. Heat until it boils and the sugar dissolves. Pour the hot sauce over the mint and let stand at least 1 hour.
