Ingredients
  • 4 small whole chicken breasts
  • salt and papper
  • 1/4 C butter or oil
  • 2 onions, thinly sliced
  • 1 garlic clove, mashed
  • 2 large tomatoes, peeled and chopped
  • Paprika
  • 3/4 C good white wine
  • 1 C sliced mushroom caps

Directions
  1. Wahs chicken and pat dry
  2. Sprinkle with salt and pepper
  3. Saute chicken in oil until golden on both sides (medium heat)
  4. Remove to platter
  5. Saute onion and garlic until onions are tender
  6. Add tomatoes and cook until mushy
  7. Return chicken breasts to skillet
  8. Season again with salt, pepper and paprika to taste
  9. Pour in wine and cook, covered for 30 minutes, adding more wine if necessary (medium low heat or simmer)
  10. Add mushrooms to mixture and cook for 7 to 10 minutes longer(simmer)
