Ingredients
  • 1 C cooked Spaghetti or leftover Pasta
  • 3 Eggs
  • 1/4 C grated Parmesan Cheese
  • 1/4 pound Italian Sausage, cooked and sliced
  • 1 Tbl. Sausage drippings
  • 4 ounces Monterey Jack Cheese, shredded
  • Orange slices and Parsley for Garnish

Directions
  1. Cut cold, cooked spaghetti into small pieces.
  2. Beat eggs; stir in spaghetti, Parmesan cheese, sausage, and Monterey Jack Cheese.
  3. Heat sausage drippings in an 8-inch, nonstick skillet; pour in spaghetti mixture.
  4. Fry 5 minutes or until brown and crisp.
  5. Slide onto flat plate; invert the skillet over plate and reverse. Fry the other side 5 minutes.
  6. Cool 5 minutes.
  7. Garnish with orange slices, cut in half, and parsley.

Be still my heart this sounds wonderful!


I am a vegetarian but love this dish and would make it for myself without the sausage but I am sure with the sausage for those who are not vegeatarian it is simply wonderf.
