How to make it

  • Cut cold, cooked spaghetti into small pieces.
  • Beat eggs; stir in spaghetti, Parmesan cheese, sausage, and Monterey Jack Cheese.
  • Heat sausage drippings in an 8-inch, nonstick skillet; pour in spaghetti mixture.
  • Fry 5 minutes or until brown and crisp.
  • Slide onto flat plate; invert the skillet over plate and reverse. Fry the other side 5 minutes.
  • Cool 5 minutes.
  • Garnish with orange slices, cut in half, and parsley.

    I am a vegetarian but love this dish and would make it for myself without the sausage but I am sure with the sausage for those who are not vegeatarian it is simply wonderf.
