Two different variations on a pretty simple pasta salad.

Ingredients
  • 1 lb bowtie pasta
  • about 1/4 c pesto
  • pint of cherry tomatoes cut in half
  • about 6 oz Feta cheese crumbled

Directions
  1. Cook bowties
  2. Drain pasta and mix in pesto
  3. Once pasta is cooled stir in tomatoes and goat cheese.
  4. Makes a great side dish for grilled chicken or as a meal itself.
  5. See the alterations for second salad.

The second salad: Use Gemelli or similar type pasta. Use zesty italin dressing for the pesto. Add in some cubed chicken breast along with the feta and tomatoes.
