Crawfish Corn Bread Recipe
This can be served with a salad and it's a complete meal!

Ingredients
  • 1 cup cornmeal
  • 1 can cream-style corn
  • 1 onion, finely chopped
  • 1/2 pound shredded cheddar cheese
  • 1/3 cup oil
  • 2 eggs
  • 2 jalapeno peppers with seeds removed, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 pound crawfish or Shrimp

Directions
  1. Combine all ingredients together, put in greased pan, and bake at 375 degrees for 30 minutes or until done. Use toothpick in the center to test; when it comes out clean, cornbread is done. Cool before cutting into squares.
  2. Serve with a salad and it becomes a full meal. May be reheated.

Oh my goodness - what a delightful recipe. I love cornbread, but adding crawfish? I may faint - ha! Can't wait to try this....thanks so much... =)
