Shrimp Wild Rice and Spinach Salad

- 2 1/2 cups of water shopping list
- 1 1/2 cups of wild rice shopping list
- 1/2 pound of small fresh shrimp shopping list
- 1/2 pound of fresh sliced mushrooms shopping list
- 1 cup of firmly packed, shredded, fresh leaf spinach shopping list
- 2 scallions with green tops, sliced shopping list
- 1/3 cup of dry white wine (optional) shopping list
- 1/4 cup of veggie oil shopping list
- 2 teaspoons of sugar shopping list
- 1 teaspoon salt shopping list
- ground black pepper to taste shopping list
How to make it
- bring water to boil and add rice, reduce hear to low and cover and cook for about 30 mins until absorbed water.
- Transfer to large bowl, cover with plastic wrap and chill
- Place shrimp in saucepan and add enough salted water to cover and bring to a boil.
- remove pan from heat and let stand for 1 minute and drain
- after shrimp has cooled, peel, devein, and add to the rice.
- add mushrooms, spinach, scallions, and toss
- in small bowl combine the wine, oil, sugar, salt, and pepper and whisk til blended and pour over rice and shrimp. Toss well and chill until ready to serve.
- The wine is optional.....Italian dressing can be used in place of the wine and oil as we usually do. You can save a bit of time by using frozen shrimp that has already been deveined and peeled.
- Next time we make this I intend on adding some shelled and salted sunflower seeds and maybe some raisins. This is a light dish perfect for a post workout snack, light lunch to take to work if you have a fridge there, or a dinner salad.
