How to make it

  • bring water to boil and add rice, reduce hear to low and cover and cook for about 30 mins until absorbed water.
  • Transfer to large bowl, cover with plastic wrap and chill
  • Place shrimp in saucepan and add enough salted water to cover and bring to a boil.
  • remove pan from heat and let stand for 1 minute and drain
  • after shrimp has cooled, peel, devein, and add to the rice.
  • add mushrooms, spinach, scallions, and toss
  • in small bowl combine the wine, oil, sugar, salt, and pepper and whisk til blended and pour over rice and shrimp. Toss well and chill until ready to serve.
  • The wine is optional.....Italian dressing can be used in place of the wine and oil as we usually do. You can save a bit of time by using frozen shrimp that has already been deveined and peeled.
  • Next time we make this I intend on adding some shelled and salted sunflower seeds and maybe some raisins. This is a light dish perfect for a post workout snack, light lunch to take to work if you have a fridge there, or a dinner salad.
