This is a good one. I find it's best when people are at my home and we've had a couple of glasses of wine before dinner.

Ingredients
  • 8 ounces of manchego cheese
  • 4 ounces of panko bread crumbs
  • 1 beaten egg
  • 1/2 cup of flour
  • paprika to taste
  • enough high quality olive oil to coat the bottom of your pan

Directions
  1. Cut the manchego into little triangles.
  2. Heat oil in skillet - medium high should work.
  3. Dip the triangles into the egg, dip in flour mixture (flour mixed with paprika), cover with bread crumbs.
  4. Place the triangles in oil. After 2-3 minutes, turn the triangles over.
  5. It’s finished when the triangles are golden brown.
  6. I find manchego frito to be best on some warm crusty bread, but it would also work with warm pita or just by itself.

I've sen manchego in the supermarket but have never had it....What's the flavor like?


It's a cheese made of sheep's milk and it's semi-hard. It has kind of a unique salty flavor that is also nice by itself on crackers or with olives. The flavor of this recipe reminds me a lot of saganaki, the flaming cheese they serve as an appetizer in Greek restaurants.
