How to make it

  • Cut the manchego into little triangles.
  • Heat oil in skillet - medium high should work.
  • Dip the triangles into the egg, dip in flour mixture (flour mixed with paprika), cover with bread crumbs.
  • Place the triangles in oil. After 2-3 minutes, turn the triangles over.
  • It’s finished when the triangles are golden brown.
  • I find manchego frito to be best on some warm crusty bread, but it would also work with warm pita or just by itself.

    It's a cheese made of sheep's milk and it's semi-hard. It has kind of a unique salty flavor that is also nice by itself on crackers or with olives. The flavor of this recipe reminds me a lot of saganaki, the flaming cheese they serve as an appetizer in Greek restaurants.
