A perfect stuffing for pork or duck. This is from The Woman's Day Encyclopedia of Cookery 1968

Ingredients
  • ½ C chopped celery and leaves
  • 1 yellow onion, chopped
  • 2 Tbl minced parsley
  • ¼ C butter
  • 4 Cups peeled tart apples
  • ¼ C firmly packed, light brown sugar
  • 1 tsp salt
  • ½ tsp each of ground sage, marjoram and thyme
  • ¼ tsp pepper
  • 2 c dry bread crumbs

Directions
  1. Saute celery, onion and parsley in butter until tender
  2. Add apples, sugar and seasonings
  3. Cook 5 minutes longer
  4. Add bread crumbs and mix well ( adjust crumb quantity to suit)
  5. Makes about 4 cups
  6. Use with Crown Pork roast, pork chops or duck

OMG I just had this and it was the most AMAZING stuffing I ever had. I don't think I could ever go back to regular bread stuffing again. I felt like I was eating dessert for dinner. Excellent, thanks!
