Roasted Vegetables With Garlic Recipe
A quick and easy way to do boring vegetables. Lots of variations exist for this so feel free to experiment.

Ingredients
  • 2 Red Bell Peppers
  • 2 Carrots - large
  • 1 Cauliflower head
  • 3 Garlic gloves
  • 1/4 cup Olive oil
  • Salt and pepper

Directions
  1. Preheat oven to 425*
  2. Coarsely chop vegetables and add them to large tupperware bowl
  3. Mince garlic then add to bowl, add olive oil to bowl
  4. Shake ingredients together until well mixed
  5. Place vegetable mixture into a greased glass pan, cook for 45 minutes in oven
  6. Salt and pepper to taste

I made this last night and cooked it in a 375 degree oven..the same temperature as the meatloaf I served it with, it was absolutely delicious!

Alterations


I added a pinch of dried red pepper flakes and chopped fresh parsley. Used broccoli, onion, summer squash and carrots...simply delicious!
