How to make it

  • Soak gelatine in cold water for 5 minutes.
  • Heat milk then add beaten egg yolks and sugar and cook until slightly thickened.
  • Add gelatine then cook until mixture begins to thicken.
  • Fold in 2/3 cup coconut then add stiffly beaten egg whites and flavoring.
  • Spread remaining coconut on top and chill.
