Pancetta-shallot Roasted Asparagus Recipe

Ingredients

24 med-thick asparagus spears

1 1/2 tbs evoo

24 thin slices pancetta

couple minced shallots

salt and pepper

Directions

heat over to 425

Arrange asparagus in a single layer on rimmed baking sheet; lightly brush with some of the oil.

Roll 1 slice pancetta around center of each asparagus spear

Sprinkle with shallots

Drizzle or lightly brush with remaining oil; sprinkle with salt and pepper to taste.

Bake 12-15 mins or until pancetta is lightly crisp and asparagus is lightly browned.

I cooked it for a little bit longer till the pancetta had crisped up a bit more and added a little grated parmesan on top. To be honest I think it would have tasted great without that but I was trying to combine ideas from two recipes into one.
