How to make it

  • heat over to 425
  • Arrange asparagus in a single layer on rimmed baking sheet; lightly brush with some of the oil.
  • Roll 1 slice pancetta around center of each asparagus spear
  • Sprinkle with shallots
  • Drizzle or lightly brush with remaining oil; sprinkle with salt and pepper to taste.
  • Bake 12-15 mins or until pancetta is lightly crisp and asparagus is lightly browned.
