Pancetta-Shallot Roasted Asparagus

- 24 med-thick asparagus spears shopping list
- 1 1/2 tbs evoo shopping list
- 24 thin slices pancetta shopping list
- couple minced shallots shopping list
- salt and pepper shopping list
How to make it
- heat over to 425
- Arrange asparagus in a single layer on rimmed baking sheet; lightly brush with some of the oil.
- Roll 1 slice pancetta around center of each asparagus spear
- Sprinkle with shallots
- Drizzle or lightly brush with remaining oil; sprinkle with salt and pepper to taste.
- Bake 12-15 mins or until pancetta is lightly crisp and asparagus is lightly browned.
