How to make it

  • Stir in eggs sugar and salt and mix well, until egg is evenly distributed
  • Add cinnamon, raisins, lemon zest and stir some more
  • Start adding flour in small batches and stir, until thick dough forms

  • Fold the dough out on a board and roll it into a ball
  • With your bare hands, tear off pieces of dough the size of a nectarine or large plum, form balls, drench them in flour.
  • Press each ball down on the board, using your three middle fingers - to about 1/2 thick "patty"
  • Heat 4-5 tbsp cooking oil in a skillet
  • Fry cheese patties on both sides over medium heat, until pleasantly browned and not too dark
  • Remove from oil with slotted spoon and place on paper towel to drain excess fat.
  • Serve with sour cream on the side

  • GRANDPA'S VARIATION: Skip the sugar and dried fruit. Add more salt.

These are great, I also make mine with ricotta cheese, they come out really tender. Never added raisins to mine before, so I got something new to try!

These turned out so good! I used homemade tvorog and fried them in sunflower oil. Thank you for putting this up, reminded me how much I loved these for breakfast.
