Spring Veggie Salad With Cheese Recipe

Ingredients

2 small fresh pickling cucumbers with skin

6-8 medium red radishes

4-5 thin green scallions, both white and green parts

1 cup of farmer cheese

2-3 generous tbsp of fresh chopped dill

salt to taste

sour cream or plain yogurt 1/3 cup or more if you like

Directions

Slice all vegetables in as uniform way as possible

Chop dill and scallions

Toss everything in a salad bowl.

Add cheese and sour cream

Add salt to taste

Mix well, taking care not to mash the veggies

Enjoy by itself or on a slice of fresh toasted sourdough bread
