Zucchini Raisin Muffins

- 2 medium zucchini, shredded (about 2 cups) shopping list
- 1 1/2 cups sugar shopping list
- 1 cup unsweetened applesauce shopping list
- 3 eggs or 6 egg whites, beaten shopping list
- 1 tablespoon vanilla extract shopping list
- 1 1/2 cups oatmeal shopping list
- 1 1/4 cups wheat flour shopping list
- 1 1/4 cups white flour shopping list
- 1 tablespoon cinnamon shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 cup raisins shopping list
How to make it
- Combine above ingredients
- Spray muffin pan with non stick spray
- Fill to top
- Bake at 350 degrees for 20 to 30 minutes

These were pretty good. I had to use frozen zucchini & I'm afraid the measurements should have been different for me because the muffins were a little tough but still tasty for a nutritious muffin.
