Ingredients

5 eggs

1 can of evaporated milk (410 grams)

2 1/2 - 3 glasses of self-raising flour

3 glasses of grated Halloumi cheese (sheep and goat milk cheese)

1 glass of vegetable oil (I used corn oil, in Cyprus we use peanut oil)

5 - 6 spoonfuls of dried mint

Directions

In a big bowl whisk the eggs (no mixer required), add the grated cheese, the oil, milk, dried mint (be generous with it) and the flour.

The amount is between 2 1/2 - 3 glasses depending on how big your glass is and how big the eggs as well.

Just make it as the texture of a cake and also bake it as a cake. When a toothpick comes out clean, then its ready. If the crust is not brown, leave it to bake for 10 more minutes, see how crunchy it is outside and how moist inside.

If you cannot find halloumi try with other hard Greek cheese, like graviera or kefalograviera.

I am sorry I left that out, probably I must have mentioned it somewhere in the rest of the recipe in my blog. I baked it for one hour at 180 degrees centigrade but depending on your oven leave it until a nice crispy crust is formed.
