This was a cake that was in the better homes magazine, but I adapted it. Omit the coconut if you don't like it.

Ingredients
  • 1 orange
  • 1 cup raisins
  • 1/2 cup coonut
  • 1/2 cup walnut pieces
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 cup sugar

Directions
  1. Grease a 13 x 9 inch baking pan. Zest 1 orange ans set aside. Juice the orange to make 1/3 cup....set aside.
  2. In a lare bowl with an electric mixer on medium to high speed beat together the shortening and 1 cup sugar until combined. Add eggs and beat until combined. Add flour and beat until combined. In a measuring cup mix together the buttermilk and baking soda until soda is disolved. Add to flour mixture with vanilla and beat until combined. Stir in coconut, raisins and walnut pieces.
  3. Spoon batter into prepared pan.
  4. Bake in a 350 degree oven for 30 minutes or until a toothpick inserted comes out clean.
  5. In a small bowl, mix reserved orange juice and 1 cup sugar. Pour sugar mixture over cake. Return to oven; bake for 8 to 10 minutes more or until topping is bubbly. Cool in pan on a wire rack.
