How to make it

  • Grease a 13 x 9 inch baking pan. Zest 1 orange ans set aside. Juice the orange to make 1/3 cup....set aside.
  • In a lare bowl with an electric mixer on medium to high speed beat together the shortening and 1 cup sugar until combined. Add eggs and beat until combined. Add flour and beat until combined. In a measuring cup mix together the buttermilk and baking soda until soda is disolved. Add to flour mixture with vanilla and beat until combined. Stir in coconut, raisins and walnut pieces.
  • Spoon batter into prepared pan.
  • Bake in a 350 degree oven for 30 minutes or until a toothpick inserted comes out clean.
  • In a small bowl, mix reserved orange juice and 1 cup sugar. Pour sugar mixture over cake. Return to oven; bake for 8 to 10 minutes more or until topping is bubbly. Cool in pan on a wire rack.
