Old Fasioned Chicken Noodle Soup

- 1(5lb) chicken quartered shopping list
- 6c. each water and chicken broth shopping list
- 4 lg. carrots,cut in 1" pieces shopping list
- 3 lg. stalks celery with leaves,cut in 1"pieces shopping list
- 2 small parsnips,cut in 1" pieces shopping list
- 1 lg onion,cut in 8 wedges shopping list
- 8 lg sprigs flat-leaf parsley shopping list
- 3 cloves garlic,smashed shopping list
- The above ingredients for chicken and stock. shopping list
- Soup: shopping list
- 2c baby carrots,cut into 11/2" pieces shopping list
- 1c sliced celery shopping list
- 1c parsnips,peeled,diced shopping list
- 1Tbs kosher salt shopping list
- 1/4tsp fresh ground black pepper shopping list
- 8 oz. dried kluski egg noodles(about 21/2 cups) shopping list
- 2Tbs chopped flat-leaf parsley shopping list
How to make it
- Chicken and Stock:
- Bring chicken and water to a boil in a 6 to 8 qt. stock pot. Sim and discard foam from surface of water;add broth and remaining stock ingredients. Bring to a second boil,reduce heat to low,and simmer,partially covered until chicken is tender,about 50 mins. Remove chicken to a cutting board. When cool enough to handle,remove skin,and bones;discard.
- Shread meat and set aside.
- Soup
- Strain broth thru cheescloth-lined sieve into clean pot; press solids to extract liquid. Stir baby carrots,celery,parsnips,salt and pepper into broth and bring to a boil;reduce heat to low,cover pot, and simmer 6 mins. Stir in noodles,continue to simmer 4 mins. Stir in chicken and parsley. Remove from heat and let soup stand 10 mins,or unttil noodles are just tender.

What a wonderfully rich recipe! I found that I really like parsnips, but there aren't many recipes for them, at least that I've seen. Thanks! High 5!!
