I found this in a magazine and altered it more to my tastes...it's one of my husband's favorites!

Ingredients
  • Homemade or frozen meatballs, thawed
  • 2 eggs, slightly beaten
  • 2/3 cup grated parmesan
  • 8 oz. spaghetti/ buccatini
  • 2 large sweet onions, finely chopped
  • 2 Tbsp buter
  • 1 egg, slightly beaten
  • 1 cup ricotta cheese
  • 2 Tbsp fresh basil
  • 1/4 tsp black pepper
  • 1- 26 oz. jar tomato and basil spaghetti sauce
  • 1 1/2 cups shredded mozzarella

Directions
  1. Prepare meatballs; set aside. Grease spring form pan.
  2. For pasta crust, in a small bowl, combine two eggs and parmesan cheese; set aside. Cook pasta in lightly salted boiling water according to package directions. Drain well and return to pan. Add egg mixture, tossing to coat. Press pasta into the bottom of the prepared springform pan; build up sides slightly. Set aside.
  3. Meanwhile, in a large skillet, cook onions, covered, in butter over medium-low heat about 15 minutes or until onions are tender and slightly browned; stir occasionally. Uncover; increase heat to medium and cook about 5 minutes more or until onions are golden brown, stirring occasionally. Remove from heat.
  4. Preheat oven to 350 degrees. In a small bowl, stir together one egg, the ricotta cheese, the snipped basil, and pepper. Spread ricotta cheese mixture over pasta crust. Top with camelized onions. Place springform pan on a large baking sheet. Bake for 15 minutes. Spoon 3/4 cup of sauce over the layers in pan. Sprinkle with 1/2 cup mozzarella.
  5. Toss meatballs with another 3/4 cup sauce and another 1/2 cup mozzarella cheese. Arrange mixture over layers in pan, forming a mound. Top with 1/2 cup of remaining sauce.
  6. Tent lightly with foil and bake for 40 to 45 minutes more, or until heated through. Sprinkle with remaining cheese. Let stand, uncovered, on a wire rack before cutting into wedges with a serrated knife.

Ohhh that sounds sooo rich - THAT definitely is a comfort food! pity it is too much just for one - wish my son was still living at home and inviting his friends over - but maybe i can cook it for him, his wife and kid one of these days, when asparagus time is over. thank you for sharing, i have bokmarked and shall revert to it just as soon as it is time for comfort food again!
