Southwest Rollups

- 1 boneless, skinless chicken breast shopping list
- salt/pepper shopping list
- 1 t vegetable oil shopping list
- 2 T minced red bell pepper shopping list
- 2 T minced green onion shopping list
- 1/3 c frozen corn shopping list
- 1/4 c canned black beans rinsed and drained - mashed up a little shopping list
- 2 T frozen spinach (I use fresh spinach, so I estimate about a half cup before it cooks down) shopping list
- 2 T jalapeno peppers shopping list
- 1/2 T fresh parsley, minced shopping list
- 1/2 t cumin shopping list
- 1/2 t chili powder shopping list
- 1/4 t salt shopping list
- dash cayenne pepper shopping list
- 3/4 c monterey jack cheese shopping list
- 5 7" flour tortillas shopping list
How to make it
- Season the chicken with salt and pepper and grill it.
- Set aside to cool, then chop it up into small bite size pieces
- In a medium skillet, heat 1 t. veg oil, add the bell pepper, onion and saute just until tender
- Add the chopped chicken, corn, black beans, spinach, jalapenos, parsley, cumin, chili powder, salt and cayenne.
- Cook 4 minutes, stirring well so that the spinach cooks down and the beans incorporate into all ingredients.
- Remove from heat, add cheese
- spread 1/5th of the mixture onto warm tortilla and wrap up like an egg roll (ends folded in, rolled up)
- Can be chilled overnight at this point, if you don't want to cook up right away.
- Preheat oven to 425
- Spray each rollup with vegetable oil (use a mister or regular cooking spray)
- Bake 17-20 minutes, turning once halfway through
- Let cool before eating and serve w/ fresh guacamole
