Southwest Rollups Recipe
Tastes an awful lot like the southwest eggrolls at a certain restaurant - but these aren't fried! We eat them with a big bowl of tomato soup for a fabulous guilt-free dinner. This is my very favorite recipe from Todd Wilbur

Ingredients
  • 1 boneless, skinless chicken breast
  • salt/pepper
  • 1 t vegetable oil
  • 2 T minced red bell pepper
  • 2 T minced green onion
  • 1/3 c frozen corn
  • 1/4 c canned black beans rinsed and drained - mashed up a little
  • 2 T frozen spinach (I use fresh spinach, so I estimate about a half cup before it cooks down)
  • 2 T jalapeno peppers
  • 1/2 T fresh parsley, minced
  • 1/2 t cumin
  • 1/2 t chili powder
  • 1/4 t salt
  • dash cayenne pepper
  • 3/4 c Monterey Jack cheese
  • 5 7" flour tortillas

Directions
  1. Season the chicken with salt and pepper and grill it.
  2. Set aside to cool, then chop it up into small bite size pieces
  3. In a medium skillet, heat 1 t. veg oil, add the bell pepper, onion and saute just until tender
  4. Add the chopped chicken, corn, black beans, spinach, jalapenos, parsley, cumin, chili powder, salt and cayenne.
  5. Cook 4 minutes, stirring well so that the spinach cooks down and the beans incorporate into all ingredients.
  6. Remove from heat, add cheese
  7. spread 1/5th of the mixture onto warm tortilla and wrap up like an egg roll (ends folded in, rolled up)
  8. Can be chilled overnight at this point, if you don't want to cook up right away.
  9. Preheat oven to 425
  10. Spray each rollup with vegetable oil (use a mister or regular cooking spray)
  11. Bake 17-20 minutes, turning once halfway through
  12. Let cool before eating and serve w/ fresh guacamole
