How to make it

  • Season the chicken with salt and pepper and grill it.
  • Set aside to cool, then chop it up into small bite size pieces
  • In a medium skillet, heat 1 t. veg oil, add the bell pepper, onion and saute just until tender
  • Add the chopped chicken, corn, black beans, spinach, jalapenos, parsley, cumin, chili powder, salt and cayenne.
  • Cook 4 minutes, stirring well so that the spinach cooks down and the beans incorporate into all ingredients.
  • Remove from heat, add cheese
  • spread 1/5th of the mixture onto warm tortilla and wrap up like an egg roll (ends folded in, rolled up)
  • Can be chilled overnight at this point, if you don't want to cook up right away.
  • Preheat oven to 425
  • Spray each rollup with vegetable oil (use a mister or regular cooking spray)
  • Bake 17-20 minutes, turning once halfway through
  • Let cool before eating and serve w/ fresh guacamole
