Curried Parsnip Soup Recipe
Great soup! A little spicy with the curry powder (I use mild)I wasn't sure about this soup but I was sold after I tasted it! One of my favorites!

Ingredients
  • 2 lb Parsnips, peeled & sliced
  • 2 -15oz cans Fat Free reduced sodium chicken broth
  • 1 Onion, sliced
  • 1 clove Garlic, minced
  • 1 tsp Curry Powder
  • salt & pepper to taste
  • 1/2 pint Fat Free Half & Half, put in at end
  • 1/2 stick margarine

Directions
  1. Saute onion, parsnips & minced garlic in margarine for 5-10 min. on medium-high heat
  2. Add broth & curry powder, salt & pepper.
  3. Simmer on medium heat for 20 minutes or until parsnips are soft.
  4. Put in blender or food processor & puree. Serve
