Curried Parsnip Soup

- 2 lb parsnips, peeled & sliced shopping list
- 2 -15oz cans Fat Free reduced sodium chicken broth shopping list
- 1 onion, sliced shopping list
- 1 clove Garlic, minced shopping list
- 1 tsp curry powder shopping list
- salt & pepper to taste shopping list
- 1/2 pint Fat Free Half & Half, put in at end shopping list
- 1/2 stick margarine shopping list
How to make it
- Saute onion, parsnips & minced garlic in margarine for 5-10 min. on medium-high heat
- Add broth & curry powder, salt & pepper.
- Simmer on medium heat for 20 minutes or until parsnips are soft.
- Put in blender or food processor & puree. Serve
