Ingredients
- 1 cup uncooked orzo shopping list
- 2 cups chopped fresh basil shopping list
- 1/2 cup chopped oil packed sundried tomatoes, drained shopping list
- 3 Tblsp chopped red onion shopping list
- 3 Tblsp chopped pitted kalamata olives shopping list
- 1/2 tsp freshly ground pepper shopping list
- 1/4 tsp salt shopping list
- 1 6 oz jar marinated artichoke hearts, undrained shopping list
- 3/4 cup feta cheese shopping list
How to make it
- Cook orzo according to directions. Drain, rinse with cold water. Combine orzo & next 6 ingredients in a large bowl. Drain artichokes, reserving marinade. Coarsely chop artichokes & add them & reserved marinade to orzo mixture, tossing gently to coat. Sprinkle with feta
- cheese & toss again. Drizzle with olive oil if it is too dry.
