Country Corn Muffins

- 3/4 cup yellow cornmeal shopping list
- 3/4 cup flour shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 6 tablespoons flax seeds, ground in 18 tablespoons water shopping list
- 1/4 to 1/2 cup non-dairy milk shopping list
- 2 tablespoons sweetener shopping list
- 2 tablespoons oil shopping list
- 1/2 teaspoon vinegar shopping list
- 1 cup corn kernels shopping list
How to make it
- Preheat oven to 350.
- In a small bowl, mix together the ground flax seeds and water. Let sit for a couple minutes
- In a large bowl, stir together dry ingredients
- Add wet ingredients until just mixed
- Spoon mixture into oiled muffin tins, filling cups up to the top
- Bake for 15-30 minutes
- Cool for 5 minutes before devouring
