Very Best Carrot Cake

- 3 eggs shopping list
- 2 cups sugar shopping list
- 1-1/4 cups oil shopping list
- 2 cups flour shopping list
- 2 tspn baking soda shopping list
- 1 tspn salt shopping list
- 2 cups shredded carrots shopping list
- 1 small can crushed pineapp;e undrained shopping list
- 1 cup flaked coconut shopping list
- 1 cup chopped nuts (I use pecans) shopping list
How to make it
- Heat oven to 350*.
- Grease & flour 9 X 13 pan or tube pan
- Beat together eggs and sugar.
- Add and beat in oil.
- Sift together and add flour, baking soda and salt.
- Add and combine the rest of the ingredients.
- Pour into prepared pan and bake 45 minutes (1 hour if using tube pan)

- Frost cooled cake with following:
- Blend together 8 oz, cream cheeze and 1 stick butter or margerine.
- Then add 1 tspn vanilla and 1 box powdered sugar.
