I'm crazy for carrot cake and when I saw this in a newspaper supplement, I knew I'd found a keeper.

Ingredients
  • 3 eggs
  • 2 cups sugar
  • 1-1/4 cups oil
  • 2 cups flour
  • 2 tspn baking soda
  • 1 tspn salt
  • 2 cups shredded carrots
  • 1 small can crushed pineapp;e undrained
  • 1 cup flaked coconut
  • 1 cup chopped nuts (I use pecans)

Directions
  1. Heat oven to 350*.
  2. Grease & flour 9 X 13 pan or tube pan
  3. Beat together eggs and sugar.
  4. Add and beat in oil.
  5. Sift together and add flour, baking soda and salt.
  6. Add and combine the rest of the ingredients.
  7. Pour into prepared pan and bake 45 minutes (1 hour if using tube pan)

  9. Frost cooled cake with following:
  10. Blend together 8 oz, cream cheeze and 1 stick butter or margerine.
  11. Then add 1 tspn vanilla and 1 box powdered sugar.
