How to make it

  • Cook rice for 10 minutes with salt then drain well.
  • Add to rice enough milk to cover it then add butter and continue cooking until rice is tender and milk is absorbed.
  • Beat together eggs and sugar then add heavy cream and vanilla and mix well.
  • Add ricotta and mix well with rice mixture.
  • Pour into three pie pans and bake at 350 for 30 minutes.
