Rice Pie

- 1 pound white rice shopping list
- 1-1/2 sticks salted butter shopping list
- 24 eggs shopping list
- 2-1/2 cups sugar shopping list
- 2 cups heavy cream shopping list
- 1 tablespoon pure vanilla extract shopping list
- 2 pounds ricotta cheese shopping list
- 1 teaspoon salt shopping list
- milk shopping list
How to make it
- Cook rice for 10 minutes with salt then drain well.
- Add to rice enough milk to cover it then add butter and continue cooking until rice is tender and milk is absorbed.
- Beat together eggs and sugar then add heavy cream and vanilla and mix well.
- Add ricotta and mix well with rice mixture.
- Pour into three pie pans and bake at 350 for 30 minutes.
