This is a fantastic curry...You can use any white fish in this recipe but the skinless fillets is extremely good too. Curry Sauce absolutely magnificent in this dish..ENJOY !!

Ingredients
  • 3-4 tbsp. olive oil
  • 2 tsp red curry (see my red curry recipe)
  • 1 can tomatoes wedges or fresh tomatoes
  • 1 lb white fish fillets
  • 1 medium onion sliced
  • 1 clove garlic crushed
  • 1 tbsp light soy sauce or fish sauce
  • 2 tbsp sugar
  • 1 Tbs chopped fresh parsley
  • 1 cup of fresh okra whole cut tip and end

Directions
  1. Prepare the fish by cutting it into bite sized pieces.
  2. In a large frying pan. Stir in red curry, onion and garlic then cover and cook on high for 3 minutes.
  3. Add in the fish, undrained wedges tomatoes, okra, soy sauce, sugar cover and cook on high for about 8 minutes or until fish is just tender.
  4. Stir slightly, making sure fish don't break, if using skinless fillets, top with parsley and it ready to serve...
  5. Serve on side of Jasmine rice.
