How to make it

  • Prepare the fish by cutting it into bite sized pieces.
  • In a large frying pan. Stir in red curry, onion and garlic then cover and cook on high for 3 minutes.
  • Add in the fish, undrained wedges tomatoes, okra, soy sauce, sugar cover and cook on high for about 8 minutes or until fish is just tender.
  • Stir slightly, making sure fish don't break, if using skinless fillets, top with parsley and it ready to serve...
  • Serve on side of Jasmine rice.
