Seared Asparagus And Purple Cauliflower Recipe
This dish uses purple cauliflower- a much sweeter tasting cauliflower to give a kick of color to this Asparagus side dish

Ingredients
  • 1 bunch of Asparagus tips- thinner the better
  • 1 cup of purple cauliflower florets
  • 1 medium shallot diced
  • 3-5 garlic cloves minced
  • 2-3Tbsp Olive Oil
  • 2Tbsp Balsamic vinegar
  • Salt to Taste
  • Coarse Black Pepper to Taste
  • Optional- 4oz Goat Cheese crumbled

Directions
  1. Prep the cauliflower by taking a paring knife and create medium florets from the cauliflower head
  2. Place oil in large skillet and place on med heat
  3. Add diced shallots and minced garlic to skillet and lightly brown
  4. Add Purple Cauliflower and Asparagus and saute. Stirring sparingly till Asparagus has light searing on each side.
  5. Add Vinegar to the veggies and stir mixture till the Vinegar smells sweet
  6. Take off heat add salt and pepper stir and top with goat cheese crumbles (optional)

I can imagine these colors would look and taste great paired with the right starches/sauces or even meat (alone would be good too) Good recipe using something not widely put in recipes!
