Asparagus Beef Recipe
This is one of my favorites. I serve it 3 or 4 times a month.

Ingredients
  • 12 oz. round or other lean steak.
  • 1/2 tspn baking soda.
  • 1 onion (original recipe calls for 2)
  • 1 bunch asparagus
  • peanut oil
  • MARINADE:
  • 2 tspn soy sauce
  • 2 tspn corn starch
  • 1 tblsp Chinese wine or dry sherry
  • SAUCE:
  • 1 tblsp soy sauce
  • 1 tblsp oyster sauce
  • 1 tblsp water
  • 2 tspn corn starch

Directions
  1. Mix marinade in small bowl and sat aside.
  2. Mix sauce in another bowl and set aside.
  3. Slice meat thinly across the grain. Disolve soda in 3 tblsp water and knead into meat until absorbed and refrigerate 2 hours (this tenderizes the meat. If time is short use a tender cut of meat and omit this step.)
  4. Cut peeled onion in half lengthwise, then into 6 wedges. Cut trimmed asparagus into 2" lengths.
  5. Add marinade to meat and let sit 20 minutes.
  6. Stir fry onion in 1 tblsp oil over high heat 1 minute, then remove to plate.
  7. Stir fry meat in 2 tblsn oil for 1 minute and add to plate with onion .
  8. Wipe out wok or frying pan and add 1 tblsp oil. Stir fry asparagus 1 minute then add 1/4 cup hot water, cover and cook 3 minutes.
  9. Add sauce ingredients and stir til thickened.
  10. Return meat and onion and toss til hot.
  11. Have a glass of wine or beer and enjoy!
