How to make it

  • preheat oven to 375
  • trim excess fat from pork loin or tenderloin, but leave some fat
  • rinse and pat dry
  • roll in salt and pepper
  • brown over medium high heat with olive oil
  • when meat is thoroughly browned, remove pan from heat and put pork in baking dish
  • pour chicken stock over pork
  • sprinkle garlic powder and pork seasoning evenly on meat
  • cover with foil
  • bake 20 minutes per pound, until meat thermometer reads 160, or until juices run clear
  • *I always take mine out at 155, it still cooks a bit while I'm finishing the rest of dinner
