How to make it

  • Soften cheese and spread over bottom of crust.
  • Place strawberries standing up over cheese.
  • Mix sugar and cornstarch together.
  • Puree enough berries in blender or processor to make 1-1/2 cups liquid.
  • Bring to boil and slowly add sugar-cornstarch mixture.
  • Cook stirring constantly until thick about 1 minute.
  • Cool then pour over berries and refrigerate.
  • Before serving put a circle of whipped cream around edges of pie and decorate with whole berries.
