Fast and easy, great with left over chicken

Ingredients
  • 3 cups cubed, chicken
  • 1 (28 oz ) can Las Palmas Green Chile Enchilada Sauce , or what ever brand you have in your area
  • 1 (15 or 19 oz ) can black beans, drained and rinsed
  • 1 1/4 cup frozen corn
  • 1 cup chopped onions
  • 2 garlic cloves, minced
  • 1 tbs chopped fresh cilantro

Directions
  1. Combine all ingredients in Dutch oven or large sauce pan; bring to a boil.
  2. Reduce heat; simmer, uncovered, 30 to 40 minutes.
  3. serve with warm corn tortillas or corn bread.

Mmm, this sounds really good. Love green chili sauce, but unfortunately the only sore that sells it wants about $6.00 a can! Have to find a recipe to make my own, and then try this, or wait til we go to North Dakota for a shopping trip. We usually stock up on Mexican products then, Rotel tomatoes, enchilada sauce, etc. Thanks for the post. Would you consider being my cooking buddy?
