Stuffed Cherry Tomatoes

- 1/2 cup finely crushed bulgur wheat shopping list
- 2 cups warm water shopping list
- 1 cup finely chopped parsley shopping list
- 1 cup finely minced sweet onion shopping list
- 1/3 cup fresh lemon juice shopping list
- 1/3 cup extra-virgin olive oil shopping list
- 1 teaspoon finely minced fresh hot peppers shopping list
- 1 teaspoon salt shopping list
- 2 tablespoons finely cut fresh mint shopping list
- 24 yellow or red cherry tomatoes shopping list
- 24 cooked shrimp about the size of the tomato diameter shopping list
How to make it
- Put wheat in a bowl then add the water.
- Let it soak while you chop other ingredients except tomatoes.
- Add them as you finish chopping them to a big bowl.
- Mix well when you finish.
- Cut just the tops off the cherry tomatoes and hollow out carefully with a grapefruit spoon.
- Add the innards to the oil mixture.
- Drain wheat very well then add to oil mixture and mix well.
- Use a small spoon and stuff wheat into tomatoes and pack it down.
- Put a shrimp on each tomato top and serve immediately.
