Stuffed Cherry Tomatoes Recipe

Ingredients

1/2 cup finely crushed bulgur wheat

2 cups warm water

1 cup finely chopped parsley

1 cup finely minced sweet onion

1/3 cup fresh lemon juice

1/3 cup extra-virgin olive oil

1 teaspoon finely minced fresh hot peppers

1 teaspoon salt

2 tablespoons finely cut fresh mint

24 yellow or red cherry tomatoes

24 cooked shrimp about the size of the tomato diameter

Directions

Put wheat in a bowl then add the water.

Let it soak while you chop other ingredients except tomatoes.

Add them as you finish chopping them to a big bowl.

Mix well when you finish.

Cut just the tops off the cherry tomatoes and hollow out carefully with a grapefruit spoon.

Add the innards to the oil mixture.

Drain wheat very well then add to oil mixture and mix well.

Use a small spoon and stuff wheat into tomatoes and pack it down.

Put a shrimp on each tomato top and serve immediately.
