Tipsy Tart Recipe
An easy dessert or teatime treat that can knock your socks off if you are as heavy handed as I am with the brandy.

Ingredients
  • 250g Pkt stoned dates, chopped
  • 250 ml boiling water
  • 5 ml bicarbonate of soda
  • 125 g butter or margarine, softened
  • 250 ml sugar
  • 2 eggs, beaten
  • 2 ml salt
  • 5 ml baking powder
  • 375 ml flour sifted
  • 100ml chopped pecan nuts (optional)
  • Syrup
  • 500 ml sugar
  • 10 ml butter or margarine
  • 250 ml water
  • 200 ml brandy
  • 5 ml vanilla

Directions
  1. Tart
  2. Soak chopped dates in boiling water with bicarbonate of soda until soft, about 15 minutes.
  3. Cream together butter and sugar until pale and fluffy, beat in eggs.
  4. Sift together dry ingredients.
  5. Fold into creamed mixture alternately with date mixture. Add nuts. Turn into two greased and floured pie plates.
  6. Bake at 180o C for about 20 -25 minutes.
  7. Syrup
  8. Boil together sugar, butter and water to form a thickish syrup.
  9. Remove from heat, add brandy and vanilla.
  10. Remove tarts from oven, prick all over with a toothpick, pour syrup over warm tarts.
  11. Serve warm or cold with whipped cream
