Defenantly not one for the thighs but waking up on a Sunday to fresh poached eggs covered in home made hollandaise, is devine....make sure you have lots of bread or toast around to soak it all up, you won't want to waist a drop.

Ingredients
  • 200g melted butter
  • 3 large egg yolks
  • 1 table spoon of fresh lemon juice ( I use two if it's the bottled stuff)
  • Salt and pepper to taste.

Directions
  1. In a large bowl seperate the 3 egg yolks, whisk until they break up and start to go pale creamy yellow.
  2. Add in all the melted butter whisking the whole time, a table spoon at a time.
  3. Once thick and creamy add in the lemon juice salt and pepper.
  4. *Can also be done in a electric mixer.
