Ingredients
  • 2 large fresh meaty tomatoes
  • salt & fresh ground pepper
  • fresh mozzarella cheese (about 3 or 4 small rounds)
  • roasted red pepper
  • basil leaves (about 10 or so, thinly sliced)
  • olive oil
  • balsamic vinegar
  • fresh crusty bread

Directions
  1. Slice tomatoes about 1/2 inch thick and place on a serving plate.
  2. Sprinkle with salt and pepper.
  3. Slice the mozzarella about 1/4 inch thick, and place on top of the tomatoes.
  4. Arrange slices of roasted pepper over the mozzarella.
  5. Sprinkle with basil.
  6. (To thinly slice the basil, stack the leaves, roll them up, and slice them across)
  7. Drizzle with olive oil and balsamic vinegar.
  8. Serve with the bread.
