Honey Cupcakes With Orange Icing

I don't know what I was thinking when coming up with this but I'm glad I went with it, they are yummers! The icing is a variation of my mother's recipe, she puts it on angel food cake.
Ingredients
- Cupcakes: shopping list
- 1/2 c. whole wheat flour shopping list
- 1/2 c. all purpose flour shopping list
- 1/2 tsp. baking powder shopping list
- 1/4 tsp. baking soda shopping list
- 1/4 tsp. sea salt shopping list
- 1/3 c. skim milk shopping list
- 2 eggs shopping list
- 1/4 c. applesauce shopping list
- 1/4 c. olive oil shopping list
- 2/3 c. honey shopping list
- 1/2 tsp. vanilla shopping list
- Icing: shopping list
- 1 1/2 c. powdered sugar shopping list
- 1 1/2 T. orange juice shopping list
- 1/2 tsp. orange extract shopping list
- 1/2 tsp. orange zest shopping list
How to make it
- Mix ingredients for icing. (You want to do this first, the longer it sits the thicker it gets)
- Mix all cupcake ingredients in a bowl until well blended.
- Pour into paper-lined muffin trays.
- Bake at 375 F for 20 min.
- Drizzle with icing.
